One of my favorite vegetable dishes has always been stir fried Japanese eggplant, but it’s hard to get the taste just right and the Japanese eggplant by itself is quite boring. The nutritional value of the Japanese eggplant is really high and excellent for women. So this morning, I paid careful attention to my steps. First I want to share I used avocado oil, which has a beautiful fragrance as it heats up the walk. I used a carbon steel walk so that I can control the temperature fast or electric stove top. I use plenty of garlic slices with about three of the six eggplants that came in my order from Weee. Everything has to happen super fast. I stirfry the garlic quickly tossed in the sliced egg eggplant stirfry to make sure the oil absorbs evenly into the eggplant and then I added my homemade chicken bone broth with ginger and a low sodium soy sauce. Let that cook stirfry constantly for about 4 to 5 minutes. throw in basil leaves toss turn off heat. The last picture shows the finish dish and it was delicious.
